Galactooligosaccharides (GOS) are short chain neutral prebiotics. GOS is generally comprised of a chain of galactose, units tha arise through consecutive transgalactosylation reactions, iwth a terminal glucose unit. GOS largely resist hydrolysis by salivary and intestinal digestive enzymes. Therefore, they reach the end of the intestine virtually intact and stimulate the growth of health-promoting bacteria such as Bifidobacteria and Lactobacilli and suppresse the survival of pathogenic microorganisms.
